His large stomach teaches us to peacefully digest all good and bad in life. The ax that he holds urges us to cut off all bonds of attachment. His hand that is lifted in blessings blesses and protects us on our spiritual path to the Supreme.

So, his outer color becomes irrelevant when you choose to worship Lord Ganesha for attaining spiritual enlightenment. Ultimately, your immense faith in Him will guide you to the path of happiness and bliss.
